Milk Rice (Kiribath) Recipe
Milk rice, or Kiribath, is a traditional Sri Lankan dish often served during celebrations and special occasions.
Ingredients
400 g raw rice
2 cups coconut milk (or regular milk)
3 cups water
Salt to taste
Method
1. Cook the Rice:
Wash the raw rice thoroughly.
Add the rice, water, and salt to a pot and bring to a boil.
Reduce the heat to medium and cook until the rice is soft and the water is absorbed.
2. Add Coconut Milk:
Once the rice is cooked, pour in the coconut milk and mix well.
Stir continuously over low heat until the mixture thickens, and the rice absorbs the coconut milk.
3. Shape the Milk Rice:
Transfer the cooked milk rice into a greased tray or bowl.
Flatten the top with a spoon or spatula to create an even layer.
4. Cut and Serve:
Allow the milk rice to cool slightly.
Cut into diamond or square-shaped pieces and serve warm.
Serving Suggestions
Serve with lunu miris (spicy onion sambal), coconut sambal, or jaggery for a sweet variation.
