Sri Lankan Spicy Potato Fry
This Sri Lankan Spicy Potato Fry is a flavorful and aromatic dish that brings together the warmth of spices with the comfort of potatoes. It’s a simple yet delicious side dish that pairs perfectly with rice and curry.
Ingredients
500g potatoes
8 red onions, finely chopped
4 green chili pods, sliced
2 tablespoons chili powder
2 tablespoons maldive fish (mackerel) powder
A pinch of turmeric powder
A few rampe (pandan leaves)
1 teaspoon curry powder
1 1/2 tablespoons coconut oil
Salt to taste
Juice of 1 lime
A little water
Method
1. Prepare the Potatoes
Wash the potatoes thoroughly and boil them until tender.
Peel the boiled potatoes and cut them into bite-sized pieces.
2. Make the Spice Mix
In a bowl, combine the chopped red onions, sliced green chilies, chili powder, mackerel powder, turmeric powder, curry powder, salt, and lime juice.
Add a little water to the mixture to help coat the potato pieces.
3. Cook the Potato Fry
Heat the coconut oil in a pan over medium heat.
Add the rampe (pandan leaves) to the oil for extra fragrance.
Once the oil is hot, add the potato mixture to the pan.
Fry the potatoes, stirring occasionally, until they turn golden brown and crispy.
4. Serve and Enjoy
Once the potatoes are fried to your liking, remove from heat and serve hot.
