 Coconut Sambal





A spicy and tangy Sri Lankan condiment that pairs beautifully with rice or bread, Coconut Sambal is bursting with flavors of heat, freshness, and zest.

Ingredients:


Scraped coconut

10 dry chili pods

8 red onions (finely chopped)

A pinch of mackerel powder

Salt (to taste)

Lime juice (from 1 lime)

A few kochi pods or peppercorns

Instructions:

1.Grind the Spices:

Place the dry chili pods, salt, and kochi pods (or peppercorns) in a grinder. Grind them into small pieces until well crushed.

2.Add the Onions:

Add the finely chopped red onions to the ground chili mixture and continue grinding until the onions are well mixed in.

3.Incorporate the Scraped Coconut:

 Add the scraped coconut to the mixture and grind everything together until it's well combined.

4.Finish with Lime: 

Transfer the sambal mixture into a bowl and add the juice of one lime.

5.Mix and Press:

Wash your hands thoroughly, then use them to mix and press the sambal together. This helps to release the flavors and avoid any bitterness from the lime peel.
